Ingredients
200g Okinawa soba noodles

150g pork belly or pork loin, sliced

1 small onion, sliced

1 carrot, julienned
→
2 green onions, chopped

2 tablespoons soy sauce

1 tablespoon mirin
→
1 tablespoon sake
→
1 teaspoon miso paste
→
1 teaspoon sesame oil
→
1 tablespoon vegetable oil

Optional: pickled ginger or sesame seeds for garnish

Method

Cook Okinawa soba noodles according to package instructions until just tender; drain and set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add sliced pork and cook until browned and cooked through, about 3-4 minutes.

Add sliced onion and julienned carrot; stir-fry for 2-3 minutes until vegetables begin to soften.

In a small bowl, mix soy sauce, mirin, sake, miso paste, and sesame oil.

Pour the sauce mixture into the skillet with the meat and vegetables; stir well to coat.

Add the cooked noodles to the skillet; toss everything together until heated through and evenly coated.
