200g dried wheat noodles or rice noodles1 tablespoon vegetable oil2 garlic cloves, minced1 red bell pepper, sliced1 yellow bell pepper, sliced1 carrot, julienned100g snap peas1 small zucchini, sliced3 tablespoons soy sauce1 teaspoon sesame oil (optional)2 green onions, choppedSesame seeds for garnish (optional)

Method

Cook the noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a large wok or skillet over medium-high heat.

Add minced garlic and sauté for 30 seconds until fragrant.

Add bell peppers, carrot, snap peas, and zucchini. Stir-fry for about 5-7 minutes until vegetables are tender but still crisp.
