Ingredients
4 large bell peppers (any color)1 cup cooked rice1/2 cup diced onion1/2 cup diced zucchini or other vegetables1 can (15 oz) black beans, drained and rinsed1 cup shredded cheese (cheddar or Monterey Jack)2 tablespoons olive oil1 teaspoon ground cumin1 teaspoon smoked paprikaSalt and pepper to tasteOptional fresh herbs (cilantro or parsley) for garnish

Method
1
Cut the tops off the bell peppers and remove seeds and membranes. In a bowl, combine cooked rice, diced onion, diced zucchini, black beans, half of the shredded cheese, olive oil, cumin, paprika, salt, and pepper. Stuff each bell pepper with the rice mixture and sprinkle the remaining cheese on top. Preheat the air fryer to 190°C (375°F). Place the stuffed peppers upright in the air fryer basket. Cook for 15 minutes until peppers are tender and cheese is melted. Garnish with fresh herbs if desired. Serve hot.
