4 large flour tortillas

1 can (15 oz) black beans, drained and rinsed

1 cup cooked rice

1 cup shredded cheddar cheese

1/2 cup chopped bell peppers

1/2 cup chopped onions

2 cloves garlic, minced

1 tablespoon olive oil
→
1 teaspoon cumin powder
→
1 teaspoon chili powder
→
Salt and pepper to taste

Fresh cilantro, chopped (optional)

Sour cream or salsa for serving (optional)

Method

Heat the olive oil in a skillet over medium heat. Sauté chopped onions, bell peppers, and garlic until soft.

Add black beans, cooked rice, cumin, chili powder, salt, and pepper. Cook for 5 minutes, stirring occasionally.
