In a small saucepan, combine soy sauce, mirin, sake, sugar, sesame oil, salt, and pepper. Bring to a simmer over medium heat and cook until slightly thickened to form a glaze.

Preheat a grill or grill pan over medium-high heat.

Cook the skewers, turning occasionally, until the chicken is cooked through and nicely charred, about 8-10 minutes.

During the last few minutes, brush the skewers generously with the tare sauce.
