1 red bell pepper, sliced
1 yellow zucchini, sliced
1 cup cherry tomatoes
1 medium red onion, sliced
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and freshly ground black pepper to taste

Method

Heat olive oil in a large skillet over medium heat.

Add the sliced onion and cook until translucent, about 3 minutes.

Add the red bell pepper and zucchini slices, sautéing for about 5-7 minutes until tender.

Add the cherry tomatoes and cook for an additional 2-3 minutes until they soften.
