A quick and flavorful vegetable fried rice perfect for a satisfying meal inspired by international home cooking.

Ingredients
2 cups cooked long-grain rice (preferably chilled)1 tablespoon vegetable oil1 medium onion, chopped2 cloves garlic, minced
1 cup mixed vegetables (carrots, bell peppers, peas)
2 eggs, beaten3 tablespoons soy sauce1 teaspoon sesame oil (optional)Salt and pepper to taste

Method

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add chopped onion and garlic; sauté until translucent.

Add mixed vegetables and cook for about 3-4 minutes until tender.

Push vegetables to one side of the pan and pour beaten eggs into the other side.
