Stella's Flavorful Fried Rice with Egg and Vegetables

A quick and satisfying dish blending rice, fresh vegetables, and scrambled eggs for a comforting meal.

Ingredients
2 cups cooked jasmine rice, preferably chilled2 large eggs
1 cup mixed vegetables (carrots, peas, bell peppers, corn)
2 tablespoons vegetable oil2 garlic cloves, minced2 tablespoons soy sauce1 teaspoon sesame oil (optional)Salt and pepper to taste
Green onions, chopped (for garnish)

Method

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add minced garlic and cook until fragrant, about 30 seconds.

Push garlic to one side and scramble the eggs in the empty space until just set.

Remove eggs from the skillet and set aside.

Add remaining oil to the skillet, then stir-fry the mixed vegetables until tender, about 3-4 minutes.

Add the cooked rice to the vegetables, breaking up clumps, and stir well.

Return the scrambled eggs to the skillet and mix evenly.

Pour soy sauce and sesame oil over the rice mixture, stirring to combine.

Season with salt and pepper to taste.
