A flavorful and hearty vegetable curry with tender tofu, perfect for a quick and satisfying meal.

Ingredients
400g firm tofu, pressed and cubedmake it yourself
2 tablespoons vegetable oil
1 large onion, chopped
3 garlic cloves, minced
1 tablespoon ginger, grated
2 carrots, sliced
1 red bell pepper, sliced
1 zucchini, chopped
400ml coconut milk
2 tablespoons curry powdermake it yourself
1 teaspoon turmeric
1 teaspoon cumin
1 can diced tomatoes (400g)
Salt and pepper to taste
Fresh cilantro for garnish

Method

Heat vegetable oil in a large pan over medium heat.

Add chopped onions and cook until translucent.

Stir in garlic and ginger, cook for 1 minute.

Add curry powder, turmeric, and cumin, cook for another minute.

Add carrots, bell pepper, and zucchini, and cook for 5 minutes.

Pour in coconut milk and diced tomatoes, bring to a simmer.

Add tofu cubes, season with salt and pepper.

Simmer gently for 15 minutes until vegetables are tender.

Garnish with fresh cilantro before serving.
