Spicy Lentil Curry Anjali

Ingredients
1 cup dried red lentils
2 tablespoons vegetable oil
1 medium onion, diced
3 cloves garlic, minced
1-inch piece of ginger, grated
1 can (400g) diced tomatoes
2 teaspoons curry powdermake it yourself
1 teaspoon ground cumin
1 teaspoon turmeric powder
1 teaspoon chili powder (adjust to taste)
Salt to taste
Fresh cilantro for garnish (optional)

Method

Rinse the lentils under cold water until the water runs clear.

Heat oil in a pot over medium heat.

Add diced onion and sauté until translucent, about 5 minutes.

Stir in minced garlic and grated ginger, cooking for another minute.

Add curry powder, cumin, turmeric, and chili powder, cooking until fragrant.

Pour in diced tomatoes and cook for 5 minutes, stirring occasionally.

Add rinsed lentils and 3 cups of water.

Bring to a boil, then reduce heat to low and simmer uncovered for 25-30 minutes, until lentils are tender.
