Mediterranean Lamb Stew Alex

A hearty and flavorful lamb stew seasoned with herbs and vegetables, perfect for a comforting meal.

Ingredients
500g lamb shoulder, cut into chunks2 tablespoons olive oil1 large onion, diced3 garlic cloves, minced2 carrots, sliced2 potatoes, peeled and cubed1 can (400g) diced tomatoes1 cup beef or vegetable broth1 teaspoon dried thyme1 teaspoon ground cuminSalt and pepper to tasteFresh parsley, chopped (for garnish)

Method

Heat the olive oil in a large pot over medium heat. Add the lamb chunks and brown on all sides. Remove and set aside.

In the same pot, sauté the onion and garlic until translucent. Add the carrots and potatoes, cook for another 5 minutes.

Return the lamb to the pot. Add the diced tomatoes, broth, thyme, cumin, salt, and pepper. Stir well.

Bring to a boil, then reduce heat to low, cover, and simmer for about 1.5 hours, or until the lamb is tender.

Taste and adjust seasoning as needed. Garnish with chopped parsley before serving.
