Homemade Root (Root Vegetal Essence)

4 large root vegetables (such as beets, carrots, parsnips, or turnips)

Method

Wash and peel the root vegetables thoroughly.

Cut them into thin, uniform slices or small cubes.

In a large mixing bowl, toss the prepared roots with olive oil, salt, black pepper, and herbs if using.

Spread the seasoned roots evenly on a baking sheet lined with parchment paper.

Roast in a preheated oven at 400°F (200°C) for about 30-40 minutes, stirring halfway through, until they are tender and slightly caramelized.

Allow to cool slightly, then blend or mash until smooth to create a pureed root essence.
