Homemade Caramel

1 cup granulated sugar
2 tablespoons water
1/4 cup heavy cream (warm)
2 tablespoons unsalted butter

Method

In a heavy-bottomed saucepan, combine the sugar and water over medium heat.

Stir gently until the sugar dissolves completely, then stop stirring and let the mixture simmer.

Allow it to cook until it turns a rich amber color, about 8-10 minutes, swirling the pan occasionally.

Remove from heat and carefully whisk in the warm heavy cream—be cautious as it may bubble vigorously.

Add butter, vanilla, and salt, stirring until smooth and glossy.
