1 large onion, chopped

6 cups chicken or vegetable broth

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Method

In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery; sauté until softened, about 5 minutes.
