Cauliflower Fried Rice - Emily's Style

Ingredients
1 medium head of cauliflower, grated or processed into rice-sized granules

2 tablespoons vegetable oil or sesame oil

2 eggs, beaten
→
1 cup mixed vegetables (peas, carrots, corn)
3 green onions, sliced
→
2 cloves garlic, minced
→
2 tablespoons soy sauce or tamari
→
1 teaspoon oyster sauce (optional)
→
Salt and pepper to taste
→
Sesame seeds for garnish (optional)

Method

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beaten eggs, scramble until cooked, then set aside.

Add the remaining oil to the pan. Sauté garlic and green onions until fragrant.

Add the grated cauliflower and cook for 5-7 minutes, stirring occasionally, until tender.

Stir in mixed vegetables, soy sauce, and oyster sauce if using. Cook for another 3-4 minutes.

Return the scrambled eggs to the pan and mix everything well. Season with salt and pepper.

Garnish with sesame seeds if desired before serving.
