Beef and Vegetable Stew Martha

Ingredients
1 kg (2.2 lbs) beef chunks, cut into cubes2 tablespoons olive oil1 large onion, chopped3 cloves garlic, minced3 carrots, sliced2 potatoes, cubed2 celery stalks, sliced1 can (400g) crushed tomatoes4 cups beef broth1 teaspoon dried thyme1 teaspoon dried rosemarySalt and black pepper to tasteFresh parsley for garnish

Method

Heat olive oil in a large pot over medium-high heat. Brown the beef chunks on all sides, then remove and set aside.

Sauté the onion and garlic until translucent.

Add carrots, potatoes, and celery; cook for a few minutes.

Return the beef to the pot, add crushed tomatoes, beef broth, thyme, rosemary, salt, and pepper.

Bring to a boil, then reduce heat to low and cover.

Simmer for about 1.5 hours, or until beef is tender and flavors meld.

Taste and adjust seasoning as necessary.

Garnish with chopped fresh parsley before serving.
