Spaghetti Aglio e Olio from Lucia's Kitchen

200 grams of spaghetti4 cloves of garlic, thinly sliced50 ml of good quality olive oil1 teaspoon red chili flakes (optional)Salt to tasteFresh parsley, chopped (for garnish)Grated Parmesan cheese (optional)

Method

Bring a large pot of salted water to a boil and cook the spaghetti until al dente.

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Add the sliced garlic and cook until fragrant and lightly golden, about 1-2 minutes.

If using, add red chili flakes and cook for another 30 seconds.

Drain the spaghetti, reserving a little pasta water.

Toss the spaghetti in the skillet with the garlic oil mixture, adding reserved pasta water if needed to loosen.

Season with salt to taste.

Serve immediately, garnished with chopped parsley and grated Parmesan if desired.
