Rinse the dried white beans thoroughly under cold water. In a large pot, combine the rinsed beans, water, bay leaf, and minced garlic. Bring to a boil over high heat, then reduce heat to low and simmer uncovered. Skim off any foam that forms on the surface. Cook for about 1 to 1.5 hours, or until beans are tender and creamy. During the last 10 minutes of cooking, add salt and (if using) olive oil and herbs for flavor. Remove bay leaf before serving. You can also drain excess cooking liquid if desired.
