Slice each vanilla bean lengthwise with a sharp knife to expose the seeds. Place the sliced beans into a clean glass jar with a tight-fitting lid. Pour the vodka over the beans, ensuring they are fully submerged. Seal the jar tightly and shake gently. Store in a cool, dark place for at least 8 weeks, shaking the jar once a week to help extract the flavor. After the steeping period, strain the vanilla extract through a fine mesh sieve or cheesecloth into a clean bottle, removing the vanilla beans. Ready to use or store for future baking needs.
