Golden Christmas Lentil and Cranberry Stew
A cozy holiday stew of tender lentils, tart cranberries, and warming spices, finished with carrot stars, snowy yogurt, and rosemary.

Peel the carrot.

Cut four thin slices from the thick end of the carrot.

Cut a star shape from each slice with a small star cutter.

Dice the remaining carrot.

Heat the olive oil in a large pot over medium heat.

Add the onion and celery.

Cook until softened, about 5 minutes.

Add the garlic, cumin, and cinnamon.

Stir for 30 seconds.

Add the lentils, diced carrot, tomatoes, vegetable broth, dried cranberries, bay leaf, salt, and pepper.

Bring the stew to a boil.

Reduce the heat to low.

Cover the pot and simmer until the lentils are tender, about 30 minutes.

Add the carrot stars.

Simmer uncovered until the stars are tender but hold their shape, about 5 minutes.

Remove the bay leaf.

Stir in the lemon juice.

Ladle the stew into bowls.

Spoon a little yogurt onto each serving.

Garnish each bowl with a rosemary sprig and carrot stars.
