200g spaghetti or linguine

300g large shrimp, peeled and deveined

4 cloves garlic, minced

3 tbsp olive oil

1 tsp red pepper flakes (optional)

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Method

Cook the pasta in boiling salted water until al dente, then drain and set aside.

Heat olive oil in a large skillet over medium heat.

Add minced garlic and red pepper flakes (if using), cook for about 30 seconds until fragrant.

Add the shrimp to the skillet, season with salt and pepper, cook for 2-3 minutes per side until pink and cooked through.

Squeeze lemon juice over the shrimp and toss to combine.
