Avocado Tomato Pasta

A creamy and flavorful pasta dish combining ripe avocado, rich tomato sauce, and crunchy almonds for a satisfying meal.

Ingredients
8 oz (225 g) pasta (spaghetti or penne)make it yourself
1 cup tomato sauce
1 ripe avocado, peeled and pitted
1/4 cup almonds, chopped
2 tablespoons olive oil
Salt to taste
Black pepper to taste
1 clove garlic, minced (optional)
Fresh basil or parsley for garnish (optional)make it yourself

Method

Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.

In a blender, combine the avocado, tomato sauce, olive oil, salt, pepper, and garlic if using. Blend until smooth.

In a large pan, heat a little oil over medium heat. Add the chopped almonds and toast for 2-3 minutes until golden.

Add the cooked pasta to the pan with the toasted almonds, then pour in the avocado-tomato sauce. Toss gently to combine and heat through for 2-3 minutes.

Serve immediately, garnished with fresh basil or parsley if desired.
