Tacos al Pastor

Ingredients
500g pork shoulder or pork loin, thinly sliced
1 pineapple, sliced (reserve some juice)
8 small corn tortillas
2 cloves garlic, minced
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon oregano
1/2 teaspoon ground black pepper
Salt to taste
2 tablespoons vegetable oil
Juice of 2 limes
Fresh cilantro, chopped (for garnish)
Shredded cabbage or lettuce (optional)
Salsa or hot sauce (optional)

Method

In a bowl, combine minced garlic, chili powder, cumin, smoked paprika, oregano, black pepper, salt, lime juice, and pineapple juice. Add the sliced pork and marinate for at least 15 minutes.

Heat vegetable oil in a skillet over medium-high heat. Add marinated pork slices and cook until browned and cooked through, about 10-12 minutes.

While the pork cooks, grill or toast the pineapple slices until caramelized, about 2-3 minutes per side.

Warm the corn tortillas in a dry skillet or microwave.

Assemble tacos by placing cooked pork on tortillas, topping with grilled pineapple, cilantro, and optional shredded cabbage or lettuce. Add salsa or hot sauce if desired.
