Homemade Chocolate Sandwich Cookies

Whisk together the flour, cocoa powder, baking soda, and salt in a medium bowl.

In a large bowl, beat the softened butter and granulated sugar until creamy.

Beat in the egg yolk and vanilla.

Add the dry ingredients and mix just until a soft dough forms.

Divide the dough in half, shape each half into a disk, wrap, and chill for 30 minutes.

Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.

Roll the dough between sheets of parchment to about 1/8 inch thick.

Cut into 2-inch rounds, rerolling scraps as needed, and place the rounds about 1 inch apart on the prepared sheets.

Bake for 10–12 minutes, until set, then cool completely on the sheets.

To make the filling, beat the butter until smooth.

Gradually beat in the powdered sugar, then add the vanilla and milk.

Beat until fluffy, adding a little more milk if needed for a spreadable consistency.
