Christmas Mince Pies

Orange-scented pastry, spiced mincemeat, and a snowy lemon icing make these little pies a festive centerpiece for the Christmas table.

Heat the oven to 200°C (180°C fan).

Grease a 12-hole muffin tin.

Combine the flour, caster sugar, orange zest, and salt in a bowl.

Rub the cold butter into the flour mixture until it resembles breadcrumbs.

Mix in the egg yolk and cold water until the dough comes together.

Shape the dough into a disc.

Wrap the dough and chill it for 20 minutes.

Roll the dough out to about 3 mm thick.

Cut out 12 circles large enough to line the muffin tin holes.

Press the pastry circles into the tin.

Cut small stars from the pastry scraps.

Spoon mincemeat into each pastry case.

Place a pastry star on each pie.

Bake the pies for 18 to 20 minutes until golden.

Cool the pies in the tin for 10 minutes.

Transfer the pies to a wire rack to cool completely.

Stir the icing sugar with enough lemon juice to make a thick drizzle.

Drizzle the icing over the cooled pies.

Let the icing set before serving.
