Christmas Garlic-Butter Roast Chicken
Golden roast chicken with garlic butter makes a festive centerpiece for the Christmas table, served with bright cranberries and rosemary.

Method

Preheat the oven to 200°C (180°C fan).

Pat the chicken dry with paper towels.

Mix the softened butter with the garlic, chopped rosemary, lemon zest, salt, and pepper.

Gently loosen the skin over the chicken breast with your fingers.

Spread half of the garlic butter under the breast skin.

Rub the remaining garlic butter over the chicken.

Put the lemon quarters inside the chicken cavity.

Tie the legs together with kitchen twine.

Place the chicken breast-side up in a roasting pan.

Drizzle the olive oil over the chicken.

Roast for 80–90 minutes, until the thickest part of the thigh reaches 74°C and the juices run clear.

Transfer the chicken to a board and rest it for 15 minutes.

Arrange fresh cranberries and rosemary sprigs around the chicken on a serving platter.

Carve the chicken and serve it on the festive platter.
