Homemade Starter Culture

Create your own lively homemade starter culture from scratch to boost your baking with natural fermentation.

1 cup organic wheat or rye flour
1/2 cup filtered water (at room temperature)

Method

In a clean glass jar, combine the flour and water.

Stir thoroughly until a smooth, thick batter forms, ensuring no dry flour remains.

Cover the jar loosely with a cloth or breathable lid to allow airflow.

Place the jar in a warm, draft-free spot (around 70-75°F or 21-24°C).

Allow the mixture to ferment for 24 hours.

After the initial fermentation, discard half of the mixture and feed the remaining starter with 1/2 cup of flour and 1/4 cup of water.

Mix well, cover loosely, and let it ferment again for 24 hours.

Repeat the feeding process daily for 5-7 days, until the culture is bubbly, active, and has a tangy aroma.

Once established, you can store the starter in the fridge, feeding weekly to keep it alive and active.
