In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs, water, and vegetable oil. Mix initially with a fork to combine, then knead the dough with your hands until smooth and elastic, about 8-10 minutes. Wrap the dough in plastic wrap and let it rest for 30 minutes. After resting, divide the dough into 4 equal parts. Roll each part on a floured surface until very thin, about 1/16 inch thick. Fold the sheet of dough over itself several times and cut into thin strips to your desired noodle width. Unravel the noodles and toss lightly with flour to prevent sticking. You can cook immediately or dry them for later use.
