1. Combine the mustard seeds, vinegar, and water in a glass jar or bowl. Cover and let soak at room temperature for 24-48 hours to soften the seeds.

2. Once soaked, transfer the mixture to a blender or food processor.

3. Add salt, honey or sugar, and turmeric if using.

4. Blend until smooth, adding more water or vinegar a teaspoon at a time to reach your desired consistency.

6. Transfer the mustard to a clean jar, seal, and let it sit for at least 24 hours before use to allow flavors to meld.
