Homemade Chili Flakes

10-12 dried red chili peppers (preferably Thai or Fresno)
1 teaspoon salt (optional)
1 teaspoon garlic powder (optional)
A handful of dried red chili peppers for extra heat (optional)

1. Select and dry the chili peppers thoroughly if they are not already dried. Remove stems.

2. Handle dried peppers with gloves to avoid skin irritation.

3. Using a spice grinder, blender, or mortar and pestle, grind the dried chilies into small flakes or powder, depending on your preference.

4. If using a grinder or blender, pulse gradually until desired consistency is achieved.
